Cured sausage seasoned with a variety of spices including paprika and red pepper. It is often spicy, but can also be made with a milder flavor.

The sausage is usually sold in a semi-dry, hard form, and is sliced and cooked before being eaten.

It is a traditional ingredient in Spanish and Portuguese cuisine, and is often used in dishes such as paella, tapas, and sandwiches. It is also great paired with a strong alcohol.
