Our black foiled Appenzeller is strictly regulated by the Appenzeller Guild. Sometimes know as the "spiciest cheese in Switzerland". The black foiled Appenzeller has been aged for 6 months. It has a black pepper tingle, and is rated a 7 or 8 on the Swiss type intensity scale.
