Comte cheese is produced in the Jura Massif region of eastern France. It is subtle, complex and unbelievably moist. The younger cheeses like these are milder than the well aged cheeses.
The 5-month aged Comté has a nutty, fruity flavor and a firm, smooth texture. It is classified as a semi-hard cheese and can be used in cooking, as well as eating as table cheese. Comté is a PDO (Protected Designation of Origin) cheese, meaning that it has to be produced following a specific set of rules in order to be legally called Comté.
